Abstract

A comparative organoleptic and chemical characterization was conducted on two jasmine species: Jasminum grandiflorum (Royal/Spanish Jasmine) and Jasminum sambac (Arabian/Night‑blooming Jasmine). Gas chromatographic (GC) data were processed through the MAMAY Organoleptic Digitizer 1.0 system to analyze volatile compounds and their contributions to overall olfactory impact, measured in val® units. J. grandiflorum exhibited a higher total odor impact (206.4 val®) with a floral‑fruity profile dominated by benzyl acetate and terpenoids, while J. sambac (183.9 val®) showed a sweeter, greener, and more indolic character influenced by methyl anthranilate and green esters. These findings are relevant for applications in perfumery, cosmetics, and flavoring.
